This is surely a delicious treat to enjoy with families and friends during the holiday season.
They were so good, that I have made them three times this month.
Soft, Feathery, and buttery Coconut Layer Buns
For the dough:
113 g butter, room temperature
1/4 cup sugar
116 ml boiling water
165 ml pure 100% coconut milk (I used this brand)
570 g all-purposed flour
6 g yeast (I used SAF)
1½ tsp sea salt
1 egg, lightly beaten with fork
For coconut-butter filling:
200 g sweetened shredded coconut
85 g butter, softened at room temperature
❊You will need 2 baking sheets for this buns.
Combine sweetened shredded coconut and butter together. Divide into 12 round balls. Place the balls in the refrigerator until needed.
Using an electric mixer with paddle attachment, beat butter and sugar on medium speed until light and pale. Turn the speed to low, add boiling water and coconut milk, mix until well blended. Turn off the machine, replace paddle attachment with dough hook attachment. Add all-purposed flour, yeast, salt, and egg to the mixer bowl. Knead on a low speed for 1 minute, then increase the speed to speed #2. Continue to knead for another 10 minutes to 20 minutes, or until the dough is smooth and elastic (it took me about 20 minutes on my mixer).
Remove the dough from the bowl and place it in a clean kitchen counter. Divide into 12 equal portions, about 86 - 87 grams each. Take a portion of the dough (covering the rest with clean kitchen linen to prevent them from drying), flatten it with your hand, place one ball of coconut filling in the middle, enclose the filling. Then, follow this link to shape it into a fan shape. When you are done shaping, cover baking sheets with clean kitchen linens, and let the dough rest at least 2½ hours (do not skip or rush this resting period, or else, you won't be able to attain their feathery texture)
Bake the rolls in a preheated 350℉ for 10 to 15 minutes, or until golden, rotate the baking sheets halfway through the baking process if necessary. Once the buns are done, you can serve them immediately, or you can serve at room temperature.
