At first, I didn't think that I would be able to participate making this sexy looking bread. But, after reading the recipe at Astrid's blog (she is the host for this month event by the way), I couldn't see why not?. It looked pretty manageable enough to make in one afternoon, plus, I was also tempted with the 'hot lip' shape of this rolls, although mine came out with the lip shapes completely gone. But, what the matter is the taste. When it was in the oven, the house smell so amazing, I just could not wait to grab one and ate as soon as it came out from the oven. I really enjoy the buttery taste, and feathery texture of this rolls. I must say, I love this!
So, here is my adaptation, if you like to make it the original way, please visit Astrid blog for the recipe.
Pocketbook Bread Rolls
Recipe adapted from Astrid's blog
8 tbs butter, room temperature
1/4 cup sugar
1/2 cup boiling water
1/2 cup warm milk
3 cups all-purposed flour
1½ tsp (SAF) yeast
1½ tsp sea salt
1 egg, lightly beaten with fork
Line 2 baking sheets with parchment paper. Set aside.
Using an electric mixer with paddle attachment, cream butter and sugar until light (use medium speed). Turn the speed to low, add boiling water and warm milk, and mix until well blended. Turn off the machine, replace paddle attachment with dough hook attachment. Add all-purposed flour, yeast, salt, and egg to the mixer bowl. Knead on low for 1 minute, then increase the speed to speed #2. Continue to knead for another 5 minutes. Remove the dough from the bowl and place it in a clean kitchen counter. Roll out the dough to 1/2-inch thick, Using cookie cutter cut into 2½-inch circles, then fold the circles in half and place it in parchment lined baking sheets. Cover baking sheets with clean kitchen towels, and let the dough rest at least 2½ hours (do not skip or rush this resting period, or else, you won't be able to attain their feathery texture they are famous for)
Bake the rolls in a preheated 400℉ for 7 to 8 minutes, or until golden. Remove from oven, and transfer onto serving basket. This rolls are delicious serve straight from the oven.
