Have you ever made your own lavender sugar? No? It's pretty easy. I included the recipe here. The dried lavender can be purchase online, or if you live in The US, and have this store in your area, they also carry it in their store.
To make lavender sugar, all you need to do is to whirl 2 cup of granulated sugar and 1 tablespoon dried lavender in food processor, then place it in an airtight container. You can keep this up to a month in your pantry. It's nice to sprinkle on just about any fruit tart, fruit salad. Or, cream chantilly, and since it's summer and hot outside, you can always make lavender ice cream too.
make 1 (10-inches) galette
1 sheet (450 grams) puff pastry (homemade or store bought)
5 - 6 yellow nectarines (choose the one that is ripe, but still firm to the touch)
140 grams (5 oz/about 1 cup) blueberries
2 tablespoon lavender sugar (see note above)
Roll out puf pastry into roughly 11 inches wide and 13 inches long. Place it in the baking sheet, then refrigerate at least 30 minutes.
Preheat oven to 375 degrees F.
Cut the nectarines into wedges. Remove puff pastry from refrigerator.
Add nectarines on top of puff pastry leaving about 2 inches away from the edges. Scatter blueberries on top, sprinkle with lavender sugar. Bring the edges to cover some of the filling. Bake in the middle rack for 40 to 45 minutes, until the nectarines are caramelized, the blueberry are wilted, and puff pastry is brown. Remove from the oven, and let cool a little bit in the pan, then carefully remove onto wire rack to cool completely.
