After being away from home for 6 months, finally my baby sister is coming tonight. She can only stay for a week, then she has to go back for her business trip. We had a chat on Skype last night, She had a few requests on what she wants to eat. But, for dessert she wanted something lite, as her plane will be arriving quite late in the evening. I know we both love clafoutis, and strawberry is in season, so I made the combination of pistachio and strawberry together. I tasted one, and I love it. I think she will to, I can not for her to come tonight :).
This recipe will be very easy for you to remember, it is so easy, and quick to make. The result is lite and delicious. I think it's a good dessert to have after a long 22 hours flight.
Strawberry and Pistachio Clafoutis
1/4 cup turbinado sugar
vanilla bean, scrape
1/2 cup roasted - unsalted pistachio, grind in a coffee grinder to find powder (do this in batches)
1 tbs all-purposed flour
1/2 cup coconut milk
5 or more strawberries, hulled and quartered
butter, for the bowls
Preheat oven to 350 degrees F.
Grease 5 ramekins or oven proof small bowls with butter.
In a bowl, whisk eggs, sugar, and vanilla until well combine. Add coconut milk, ground pistachio, and flour - mix well. Divide evenly among the ramekins or bowls. Top with strawberry. Bake in water bath for 15 to 20 - 25 minutes, or until set but slightly jiggle in middle when gently shake. Serve warm as is, or with homemade or store bought vanilla ice cream.
