If you are one of those people who love ice cream, but concern about your cholesterol or any other health restriction, this one might work for you.
3 cups milk (I use full fat milk, but 2 % fat milk will work too)
3/4 - 1 cup sugar (depending how sweet you want your gelato, I only use 3/4 cup)
2 tablespoon cornstarch
1 cup unsweetened cocoa powder ( I know it seems a lot, but I don't think you will regret it )!
- Heat 2 cups of milk in a large sauce pan over medium heat, meanwhile in another bowl, mix until well blended the remaining 1 cup milk with sugar, cornstarch and unsweetened cocoa powder. Transfer to heated milk and stirring constantly until the sugar dissolves and the mixture is thicken.
- Turn off the heat and cool at room temperature, then transfer to a bowl. Cover the surface with parchment paper to prevent skin forming. Cover the bowl with cling plastic and refrigerate overnight
- Transfer the mixture into an ice cream machine and process according to manufacture's direction
