I saw that some of my blackberry in the garden starting to ripen, bored with the usual blackberry tarte, I've decided to test my newest cookbook "I N D U L G E" by Claire Clark. She is the head pastry chef at "The French Laundry" in Yountville, California.
Eagerly browsed through pages, found ingredients that were available in my pantry at the time. I found "Apple and Blackberry Bande Aux Fruits" on page 70. The photograph looks astonishing and recipe seem pretty simple and straight forward. Sweet pastry with frangipane? I've made something similar a dozen times.
Got the apple? check!
Easy, simple and taste delice
just go outside and pick them up
Other ingredients? Check!
My pantry has never lack of flour, sugar, almond and there is always butter in the refrigerator

Excited that I had all ingredients needed for the recipe at home, I have started to make my tarte. As usual, I would read the recipe before doing the actual work. I was a bit puzzled when the recipe stated that I needed an oblong tart tin with measurement 25x10cm (10x4 inches) hmmm, sounded like loaf pan?
Honestly, I don't have a tart tin that size, I don't even know wether that size exists. I do though have tart tin 14x4x1 inch. Didn't want to jeopardize the recipe, I got to use my loaf pan that was exactly the right measurement as describe in the recipe 10x4 inches.
Started to roll the pastry, and fit it into the pan was a challenge, but hey, it's me! I can manage!
then made the filling, she called it almond cream, that was super duper easy! Now, filling the tart cell? well, it didn't fill up two-thirds full as the recipe stated. I thought that's okay, maybe it would puff-out (double) in the oven. As you can see from my photographs, it didn't really go all to the top. Disappointed, I could have use my regular oblong tarte tin! Maybe the result will be at least better.
This is pretty stupid of me of course!
As I type this entry, I just figure out....! of course! she meant the oblong tarte tin 10 inches long x 4 inches wide and 1 inch high. NOT the 10 inches long x 4 inches high! How dumb! Did the recipe said "tart tin?" Can't forgive myself for being so dumb!
Oh well, despite of the appearance, the tarte was d e l i c é!
