It's crunchy on the outside
When you bite in the middle, it will be chewy...
It has the texture of rustic country bread
This Almond cookie has everything, crunchy and chewy..... in the middle. I really encourage you to make it. It is so easy, it doesn't take a lot of time and elbow grease.
1/3 cup flour
3/4 cup sugar
1 tsp baking powder
2 large egg whites
1 1/2 cups unsalted dry toasted sliced almonds ( I got it from Trader's Joe)
Preheat oven to 325F
- In large mixing bowl add flour, sugar and baking powder, mix then add the egg whites beat with wooden spoon until thoroughly combined, then stir in almonds (the dough will look runny, don't worry .... it suppose to be!)
- take one tablespoon and line them 2" - 3" apart onto parchment-lined baking sheet. Bake until light golden brown, 18 - 20 minutes
- remove from the oven, let cool almost completely before peeling off parchment paper. It will be stick a little bit, just peel it off carefully.
